tasting notes
Deceptively simple initially, it comes across as a medium-bodied Cabernet Sauvignon with bing cherry, blackberry, and sage notes. With aeration over a few days, it slowly reveals an expansive, deep, grippy, and full-bodied Cabernet Sauvignon. Reflective of its mountain top pedigree, it shows high tannins, concentration, and power. It is built for a long-term cellaring of 10-20 years, slowly releasing its grip after 5-6 years. If you are looking for a soft and fruity Cabernet Sauvignon, this would not be it. This has depth and intensity like an extra inning of a game seven, just needing a perfectly grilled steak to complete the evening.
