As usual, our 2021 Cabernet Sauvignon is a dense, concentrated mountain top Cabernet Sauvignon that would benefit from bottle age. Cassis, blackberry, blueberry, and sage notes reveal a young, ripe, but powerful wine from small intense berries. It is full-bodied with impenetrable depth in its youth with a long finish, so try it over two days to see its potential. We think it is a special wine that you can open for special occasions certainly but any Tuesday with someone you love would work just as well. If anyone has 2012, 2013, or 2014 Cabernet of ours, you know how they turn out. Back in 2012, we did not have any idea how it would evolve in the bottle, but now we certainly do.
